Pink Bourbon from Huila, Colombia, produced by Diego Vergara at Finca Las Flores in Pitalito at 1700 meters above sea level. The coffee uses thermal shock processing, a precise technique where beans undergo controlled temperature contrast after extended fermentation - exposed first to hot water (around 50°C) then rapidly cooled with cold water (approximately 20°C). This stabilizes aromatic compounds developed during fermentation. Drying occurs in a sealed stainless-steel dehumidifying system until reaching 11% moisture, followed by stabilization. The result is enhanced clarity, structure, and consistency. Flavor notes include ice tea, thyme lemon, hibiscus, blueberry, and kaffir lime.
