This coffee is produced by Leoncio Maceto at Las Brisas farm in Alto Guayabos, Ortega, Tolima, Colombia. The farm grows Pink Bourbon variety at 1,860 meters altitude. The coffee undergoes a double fermentation process: 24-hour aerobic fermentation, depulping, followed by another 24-hour fermentation, then washed twice and dried in a solar parabolic dryer with 3cm layers. This slow fermentation and drying process creates a clean and complex cup with medium body, raspberry and pomegranate acidity, and vanilla and dark chocolate notes. The coffee also offers tasting notes of strawberry, peach, and raisins.
