A Gesha variety coffee from the Manos Juntas Micromill, located in the Sotara area of Colombia's Cauca region. Operated by exporting partner Banexport, the mill purchases cherries from eight local producers on the day of harvest. This naturally-processed coffee undergoes a five-day anaerobic fermentation in hermetic tanks with nitrogen gas to stimulate yeast, followed by an additional five-day aging period, then dried on solar dryers for 30–45 days. The program ensures full traceability with each tank labeled by producer.
