This Yellow Bourbon single-origin coffee originates from Pitalito, Colombia at 1,850 meters altitude. Producer Oscar Hernandez manages the Nogales farm using sustainable farming practices and biotechnology. The coffee undergoes anaerobic fermentation in hermetic tanks with mosto (pre-fermented liquid rich in native microorganisms), fermented at approximately 18°C. After fermentation, it is rinsed and dried slowly on raised beds for 15 days, followed by a 30-day stabilization period in GrainPro bags. Tasting notes include orange blossom, banana, and strawberry sorbet.
