A single-origin coffee from Oscar Hernandez's Los Nogales farm in Pitalito, Colombia, grown at 2000 meters altitude. The Typica variety undergoes an elaborate thermal shock washed process: cherries are pasteurized at 90°C, dry-depulped, fermented for 7 days using the coffee's own sugars and pre-fermented yeast, then sun-dried for 15 days. The result is a coffee with intense candy sweetness, high and crisp acidity, and flavor notes of grape, raspberry, and candy. Recommended for filter preparation.
