About This Coffee

Single estate coffee from Colombia, grown on Los Pinos and La Primavera farms in Huila. The Pink Bourbon variety undergoes a 24-hour cherry pre-fermentation followed by a 36-hour anaerobic fermentation in sealed bags. The beans are then dried on raised beds for 15 days. This semi-washed anaerobic processed coffee is a micro-lot with 100% Pink Bourbon variety. The light roast offers flavor notes of orange creamsicle, pomegranate, and allspice. Managed by farmers Edier Perdomo and Diego Horta, this fruit-forward coffee excels as a pour-over and can also be enjoyed as espresso or Americano.

Cosmic Coffee Company was founded in 2008 in Honolulu by Carlos Negrete and Jolynn, then relocated to Santa Clara, California in 2012. Negrete began roasting in 2007 and became the first barista in Hawai'i certified by the International Academy of Specialty Coffee, later adding SCA certifications in craft roasting, golden cup standards, and green coffee defect identification. The roastery sources exclusively specialty grade green beans that meet organic, shade grown, and Rainforest Alliance standards, developing individual roast profiles through multiple test batches that account for variations in density, moisture, and origin. Cosmic operates as a deliberately small, minority owned family business of three, selling at Bay Area farmers markets and through a weekly open door at their Santa Clara facility. The operation also includes a handcrafted organic tea program developed by Jolynn, who brings over 20 years of culinary experience to her original blends.
