A decaffeinated coffee from the Popayan region of Colombia. Decaffeination is performed using the Sugar Cane process, based on ethyl acetate — a natural compound derived from sugar cane. This method is considered one of the gentlest and most natural decaffeination techniques, preserving the structure of the raw coffee bean and retaining most of its aromatic properties.
