This single-origin Colombian coffee originates from the Huila region at 1800-2000 meters altitude, produced by Cadefihuila. The coffee features three primary varieties: Castillo, Caturra, and Colombia. Processed using traditional Colombian washed methods, the cherries were hand-selected at peak ripeness, de-pulped, fermented for 12-24 hours, washed, and dried in parabolic greenhouse dryers for 20 days. The coffee exhibits tasting notes of lemon, hazelnut, and hibiscus.
Geoff Polci, a certified Q Grader whose coffee journey spans two decades, founded Stereo Coffee Roasters in Toronto in June 2018. Polci first roasted coffee in 2004 at a restaurant in Costa Rica and went on to run a series of cafes and co own another roasting company before launching Stereo. The roastery focuses on sustainable, traceable coffees from single farm producers, with a particular commitment to sourcing from women and Indigenous communities. Polci brings a hands on approach to quality, and his Q Grader certification underpins the sourcing and roasting decisions across the lineup.
