Castillo variety grown by Jairo Arcila at Santa Monica farm in Quindío, Colombia at 1450-1500 meters altitude. Honey processed and dried on raised beds. This delicately sweet, tea-like cup features blue and purple fruit notes with peony and violet florals. Roasted on February 23, 2025 to a roast color of 120.4, with a recommended rest period of 2 weeks minimum.
