The beans undergo a distinctive honey process with co-fermentation: a 72-hour anaerobic fermentation with pulp on, macerated green apples, and wine yeast, followed by drying on raised beds. The cup profile features hard candy and tart lemonade notes at lower extractions, transitioning to balanced, natural flavors reminiscent of Granny Smith apples with increased extraction. Flavor develops sweeter and mellower with rest.
