This is a Colombian decaf coffee processed using the Ethyl Acetate (E.A.) natural decaffeination method. The coffee is sorted and steamed to open the seeds' pores, then placed in a solution of water and ethyl acetate which bonds with and removes the caffeine over eight hours. The seeds are steamed again to remove traces of ethyl acetate before drying and polishing. The flavor profile includes chocolate and ripe berries notes.
Lineage Coffee Roasting was founded in January 2012 by Jarrett and Justine Johnson in Orlando, Florida. The couple started with a retrofitted grill and an ice cream motor powering a 3 kilogram roaster, and within months had upgraded and begun building a reputation for meticulous small lot roasting. By 2015 they were traveling to Guatemala and Colombia to establish direct trade relationships, later expanding those connections into Kenya and Ethiopia. Today Lineage operates three café locations across Orlando, cups and dials in every coffee served, and runs a wholesale program alongside a roasting academy. The hands on approach that began with a homemade setup continues to define the company's identity more than a decade later.
