This coffee is sourced from the Cundinamarca region of Colombia, primarily through Mr. Joseel Castiblanco's collection centre near Quipile, who has been collecting for Racafe for over 20 years. The coffee cherries are either farm-processed or brought wet to the centre, with depulping occurring the day after picking, followed by 48-hour fermentation and drying in a guardiola. The lot is then transported to Racafe's dry mill in Bogotá for final sorting, cupping, bagging, and export. The varieties include Castillo, Colombia, and Tabi and Pink Bourbon, grown at an altitude of 1700-2100 meters. This washed coffee presents tasting notes of blood orange, malt, and milk chocolate.
