This coffee is from Villa Pastora farm in Palestina, Huila, Colombia. It features the Pink Bourbon variety processed using an anaerobic natural method. The cherries undergo dry anaerobic fermentation for 96 hours to preserve the intensity of the coffee's notes. The farm was founded in 1980 by Mrs. Pastora Anacona and is now run by the third generation of the Mora Ortega family. The farm employs sustainable methods and prioritizes quality production.
