About This Coffee

This coffee comes from Finca Milan in the Arabia community near Pereira, Risaralda, Colombia at 1,600 meters altitude. The farm is owned by Julio César Madrid Tisnes, a third-generation coffee producer. The coffee is a Geisha variety processed using an innovative Nitro Natural method developed by Café UBA. The process involves hand-picked cherries sorted by color, then co-fermented in a bioreactor with must, fruit oil, watermelon, and pineapple. Fermentation is inoculated with Schizosaccharomyces pombe yeast under controlled conditions at 22°C, pH 3.9, and 3 bar pressure with nitrogen injection for 30 hours. Flavor notes include marzipan, orange blossom, red apple, and watermelon.
