Processing includes selective hand-picking, 36-hour fermentation in sealed tank, dry fermentation, washing, and 22-day shade drying. Roasted to Tonino 125 color. Flavor notes include mint, pineapple, red currant, kiwi, oxidized white wine, and strawberry.
