This coffee comes from Aquiares Estate, the largest coffee farm in Costa Rica, located on the slopes of the Turrialba volcano in the Turrialba region. The variety is Centroamericano, specifically selected for anaerobic processing due to its high fruit mucilage content. The anaerobic honey process involves fermenting cherries in sealed stainless steel tanks with a one-way air valve for 24 hours, then drying first on a ceramic terrace and finishing in layered beds in a solar dryer. The flavor profile is funky, lively, and floral with a complex profile featuring nougat-like qualities, honey, and vanilla notes.
