About This Coffee

This single-origin Costa Rican coffee comes from the Don Joel farm in the West Valley region, owned and managed by Allan Oviedo. The Villa Sarchi variety is a natural mutation of Bourbon, grown exclusively in Costa Rica. The coffee is processed using the honey method, where mucilage is retained on the bean after depulping, creating a golden color during drying. Tasting notes include green apple, snickerdoodle cookie, caramel, and pecan. Medium-light roast.

Ruby Coffee Roasters

Jared and Deanna Linzmeier started Ruby Coffee Roasters in late 2013, roasting their first batches from a garage in rural Portage County, Wisconsin. Jared, a former Intelligentsia apprentice who had worked in Los Angeles, Portland, and Seattle, returned home to build something rooted in the same care for sourcing and craft he had learned in those cities. Ruby is named after Jared's grandmother. The roastery is certified organic and focuses on direct trade with small scale producers and cooperatives, prioritizing long term partnerships that support economic and environmental sustainability at origin. Food & Wine named Ruby Wisconsin's best roaster in both 2018 and 2019, and the company has also earned Good Food Awards and a Wisconsin Innovation Award. From that garage to a purpose built facility in Nelsonville, the ethos has stayed the same: thoughtful sourcing, careful roasting, and a quiet confidence in letting the coffee do the talking.
