About This Coffee

Ivan Solís Micromill is a family-run business led by Ivan Solís Rivera and the Solís Cordero family. It was founded in 2018 to sustainably produce, process, and market specialty coffees while highlighting the classic characteristics of Santa María de Dota coffees. Ivan Solís Micromill is dedicated to selecting the best fruit and implementing tried and tested processes to produce coffees with unique profiles—using washed, semi-washed, honey, natural, and natural anaerobic processing methods. The company has an exclusive roasting area for the national markets, to provide high-quality coffees at a local level. The Sagaz Coffee brand represents the quality of the coffee produced in Santa Maria de Dota, conserving sweet, citric, and fruity flavours in its different profiles. One of the areas to highlight within the organisation is sustainable development. Sagaz Coffee currently holds the Costa Rican Essential License, NAMA coffee certification, and participates in environmental programs such as Green Growth and Low Emission Incentives in institutions such as Procomer and ICAFE. Processing This coffee was intentionally processed utilising anaerobic fermentation. In general, placing freshly-harvested cherries inside a sealed container or bag of some sort for a period of time to enhance the flavour profile. Anaerobically-fermented coffees often exhibit an increase in the intensity of fruit and acidity and a slight increase in body. _ Farm: Ivan Solís Micromill Location: Santa María de Dota Process: Anaerobic_Natural Varietal: Common Costa Rican Varieties Altitude: 2000 masl Tasting: Green Apple, Pecans and Honey Aroma: Stroopwafel_ Acidity: Medium Body: Medium/Low _ BEST SERVED
