About This Coffee

This coffee is from Santa Maria, Tarrazu in Costa Rica, produced by Enrique Navarro and family at Monte Copey farm. It is a Tipica cultivar processed using the Black Wash method, where cherries are de-pulped with all mucilage left on the seeds, then fermented in a temperature-controlled tank for 48 hours until they take on a dark color, before being rinsed and dried on tables. This results in an incredibly clean coffee with intense notes of dark berries and a complex structure.
