This coffee is produced by David Alexander Lopez Benitez in Honduras. The Pacas variety undergoes washed processing where ripe cherries are picked, pulped, fermented for a day, then washed and dried. The cup profile is balanced with sweetness, stone fruit flavors, hints of baking spice, and a pleasant black tea finish. David has been working in coffee since 2000 and in specialty coffee since 2011, continuously experimenting with innovative processing techniques and planting new varietals.
