This is a Pink Bourbon varietal coffee from Huila, Colombia, produced through collaboration between producers Adrián Lasso and Jhoan Vergara at El Diviso and Las Flores farms in Pitalito. The coffee undergoes a 60-hour anaerobic fermentation followed by thermal shock washing, then is slowly dried in stainless steel dehumidifiers. It is decaffeinated using the natural EA Sugarcane method, which gently preserves the coffee's structure and nuance without synthetic chemicals. This light roast coffee offers bright fruit notes with warming spices, featuring orange, vanilla, dates, and cinnamon, complemented by a savory umami quality. It performs well as both filter and espresso, reminiscent of a Terry's Chocolate Orange.
