About This Coffee

Elias and Shady Bayter, alongside Martha Montenegro, farm this Caturra and Colombia blend at El Vergel Estate in Tolima at 1350 meters. The coffee undergoes a 48-hour full-cherry anaerobic fermentation before spending five days co-fermenting with yeast and watermelon, a process that amplifies its fruit-forward character. After patio pre-drying and mechanical drying, the beans are decaffeinated using the Swiss Water Process. The watermelon co-ferment pushes the cup into vibrant, dessert-like territory with strawberry, guava, and whipped cream.
