This is a decaffeinated natural process coffee from Benti Nenka village in Hambela, located in the Guji zone of southern Ethiopia. The coffee is sourced from small garden plots, typically less than two hectares, where coffee grows among shade trees and food crops. It is processed at Eyasu Worasa's Guduba mill using the natural method, allowing the fruit to dry intact around the seed. This light roast decaf features flavor notes of apricot, mango, honey, and orange zest, with berry sweetness, stone fruit, soft florals, and a tea-like finish.

Jared and Deanna Linzmeier started Ruby Coffee Roasters in late 2013, roasting their first batches from a garage in rural Portage County, Wisconsin. Jared, a former Intelligentsia apprentice who had worked in Los Angeles, Portland, and Seattle, returned home to build something rooted in the same care for sourcing and craft he had learned in those cities. Ruby is named after Jared's grandmother. The roastery is certified organic and focuses on direct trade with small scale producers and cooperatives, prioritizing long term partnerships that support economic and environmental sustainability at origin. Food & Wine named Ruby Wisconsin's best roaster in both 2018 and 2019, and the company has also earned Good Food Awards and a Wisconsin Innovation Award. From that garage to a purpose built facility in Nelsonville, the ethos has stayed the same: thoughtful sourcing, careful roasting, and a quiet confidence in letting the coffee do the talking.
