Happy Capybara Decaf is a regional blend from Minas Gerais, Brazil, responsible for around 74% of Brazil's total coffee volume. Sourced through Volcafe, who work with hundreds of farmers across Minas Gerais. Each farm submits samples to Volcafe's lab in Patrocínio, where quality analysts curate regional blends. The coffee is sorted by screen size in Varginha and prepared for export. Decaffeination takes place in Bremen using the Water-Ethyl Acetate process (Sugarcane/EA method), where ethyl acetate derived from sugarcane gently removes caffeine. The cup offers milk chocolate and toasted sweet popcorn on the nose, with black cherry and dark chocolate as espresso. In milk, it delivers almond and milk chocolate with a very light citrus lift.
