This decaffeinated coffee from Mexico comes from the Vayichil farm in Jaltenango, Chiapas, grown at altitudes between 1650-1800 meters. The name "Vayichil" means "to dream" in Tzotzil, a Mayan language spoken in Chiapas communities. Produced by over 65 women farmers who are part of La Tribu, a local organization in the Sierra Madre region. The coffee features Peñazco and Bourbon varieties, decaffeinated using the Mountain Water (Spring Water Decaf) process in Veracruz. This method preserves complexity while highlighting the coffee's naturally sweet and smooth character. The flavor profile is chocolatey and clean with almond notes, sweet and balanced with orange and cherry aftertaste. Harvest 2024/2025.
Randall Coffee Roasters was founded in 2013 by Barry Randall and Miguel inside Mercado de Vallehermoso, one of Madrid's revitalised market halls.
