This Colombian single-origin coffee is from Deiro García Botina's Finca Lord Voldemort in Pitalito, Huila at 1,800 meters altitude. The Ombligon variety undergoes an anaerobic washed process featuring yeast and watermelon fermentation. After cherry sorting and 36-hour oxidation, beans are depulped and fermented for 48 hours with watermelon pulp substrate and Saccharomyces cerevisiae yeast before washing and 12-day drying. Light roasted with distinctive crown melon, melona bar, and cantaloupe flavor notes balanced by subtle cucumber and mint.
