A washed single-origin coffee from Finca Brisa Eterna in Narino, Colombia, grown at 2100m elevation. The Bourbon Sidra variety undergoes 72 hours of anaerobic fermentation in sealed plastic bags, followed by mechanical depulping and 48 hours of fermentation in concrete tanks before washing and 20-day drying. Light roast with juicy red cherry, herbal cola notes, bright nectarine, and a honeyed, floral finish reminiscent of plumeria.
Founded in 2020 at the onset of the COVID 19 pandemic, Moonwake Coffee Roasters emerged from the passion of two former tech engineers, Ming Wood from Tesla and Mabel Yeung from Meta. What began as Ming's personal coffee project within Tesla's internal coffee club evolved into a full roastery operation after both founders chose to leave their tech careers to pursue coffee full time between 2023 and 2024. Moonwake represents a growing movement of technologists who discovered that coffee roasting offers greater fulfillment than their previous careers, channeling engineering precision into specialty coffee.
