Grown at 1900 meters elevation, this Castillo variety undergoes Thermal Shock Washed processing featuring Diego's proprietary "Red Plum" culture using cascara extract, mucilage, and wine yeast. The coffee presents balanced, nuanced flavors including white grape, peach, turbinado sugar, and a playful note of strawberry candy, with a light body and funky character.
