Set at elevations ranging from 800 to 1,200 meters, the farm cultivates Red Catuaí, Rubi, Arara, Catucaí, and decades-old Mundo Novo varieties across 120 hectares. The lot features layers of cocoa, raw sugar, and dried date in the dry fragrance. When brewed, it opens with molasses-like sweetness, notes of almond bars, chocolate pistachio, banana walnut bread, and a hint of Sherry. The farm practices sustainable farming, producing organic fertilizer from straw, ash, and manure, and planting ground cover to nurture soil health.
