This coffee is from the Lugmapata farm in Chimborazo, Ecuador, produced by Enrique Merino and his family. The farm is a Cup of Excellence winner. This lot features the Sidra variety and is processed using anaerobic washed method. Cherries were selectively hand-harvested and manually sorted before depulping. The coffee underwent submerged, cold fermentation at 19-20°C for 72 hours to increase flavor complexity, then dried covered by a marquesina. The flavor profile includes cherry, caramel, orange, apricot, green grape, with uncommon depth and complexity.
