This coffee is from Santa Barbara, Honduras, produced by Edgar Erazo at El Filo farm. It is a Pacas variety coffee grown at 1750 meters above sea level. The coffee undergoes anaerobic washed processing, where handpicked cherries are hand-sorted for quality, floated to remove lower density beans, placed in an anaerobic environment, then thoroughly washed and dried on raised beds. The flavor profile features intense sweetness like dark honey, delicate stone fruit notes of apricot, and subtle acidity reminiscent of candied orange.
Black & White is the realization of barista champions Kyle Ramage and Lem Butler’s ambition to democratize elite‑level coffee. They manage a dedicated roastery since 2017, roasting four days per week.
