This coffee is a Gesha variety from Timaná, Huila, Colombia, produced by Edinson Argote at La Quebradita farm. The cherries were sourced in Oporapa and processed at Edinson's facility in Timaná at 1700 meters above sea level. The advanced natural processing involves floating whole cherries, 72-hour natural fermentation, partial drying for 12 days on raised beds to 20% humidity, rehydration for four days with proprietary beer and wine yeast, fermentation in stainless steel tanks, and final drying to 10-12% moisture. The coffee is fruit-forward and tropical with cherry popsicle, orange blossom, mango, and chocolate bon bon flavor notes.
