This coffee is a microlot from Finca La Palmera in Colombia, produced by Ignacio Rodriguez's family who have owned the farm for over 50 years. The farm spans 170 hectares and focuses on specialty-quality production. Coffee cherries are selectively handpicked, floated to remove imperfect fruit, and then hand-sorted. The cherries ferment for 36-120 hours depending on ambient conditions before being dried using mechanical dryers and rested in GrainPro bags. This results in a clean, well-structured cup.
