This Geisha coffee is from Tarrazu, Costa Rica, produced by Mauricio Jimenez. The coffee is from an extension of Mauricio's uncle's farm, Delfin, located in El Cedral at almost 2000 meters altitude. It is named after the granadilla fruit plant that creates a canopy shading the geisha trees. The lot is processed using a Red Honey method, where approximately 30% of the mucilage is left on the seeds during drying. The parchment is dried on raised beds for 10-12 days until reaching 10-10.5% moisture content. The profile is described as floral, elegant, and refined, with notes of soft florals, ripe stone fruit, and fresh citrus.
