This lot is a special processed Pink Bourbon from Finca El Jardin in Tolima, Colombia, produced by Jorge Elías Rojas. The Pink Bourbon cherries are harvested at ripe sweetness, then depulped and fermented in mucilage before being washed and dried on raised beds under shade until 11.5% moisture. This classic yet modern processing elevates the intensity of the coffee, giving a bright citrus fruit forward cup with sweetness and a touch of spice. Suitable for filter or espresso.
