This coffee comes from El Mirador, a 31-hectare farm in El Portal, Huila, Colombia, at 1650 meters altitude. The farm is owned by Elkin Guzman, who has over 70 years of family coffee experience and 12 years of processing technique innovation. This lot features the Catiope variety, a blend of Bourbon known for exceptional cup quality. The Pink Champagne Washed process selects cherries above 20 degrees Brix, which are depulped and macerated with a culture fermented with spices and fruits in air-tight tanks for 140 hours, with regular Brix and pH monitoring. The coffee is then dried for 25-30 days. Flavor notes include guava, pink peppercorn, and vanilla, with intense fruit notes and interesting spice characteristics.
Jerad Jay founded Vesta Coffee Roasters in 2015 in Las Vegas, starting with a micro drum roaster in his kitchen in downtown Las Vegas. The roastery now sources roughly 90 percent of its coffee directly from farmers and cooperatives at origin, with an emphasis on sustainable growing practices and long term relationships. Vesta roasts specialty grade coffee with a focus on balance and precision, letting the nuanced flavors of each lot come through. The operation has grown from that kitchen into a full roastery with multiple locations across Las Vegas, packaging in recyclable nitrogen flushed bags to maintain freshness.
