This is a Gesha variety coffee from El Placer farm in the Quindío region of Colombia, grown at 1,744 meters above sea level. The coffee is produced by Sebastian Ramirez, a fourth-generation coffee producer. It undergoes a complex processing method involving natural carbonic maceration with honey processing and 144 hours of fermentation. The process includes two-phase anaerobic fermentation at 18°C with CO2 injection, pulping, and controlled drying over approximately 25 days. This coffee has won multiple awards including the 2024 Irish Barista Championship, 6th place at WBC 2024, 2nd place Dutch Roast Master Championship 2024, and 1st place Czech Brewers Cup Competition 2025.
