A balanced coffee from El Salvador produced by Carlos Pola on Finca Las Brisas and Finca San Antonio. Coffee cherries are hand-picked selectively and dried on raised beds in shade for three days, then depulped with the remaining mucilage dried further on raised beds for 15–20 days. Processed using honey, natural, and controlled fermentation (anaerobic) methods to minimize water use. Flavor notes include nougat, honey, and a hint of red apple, with a pleasant, soft body and good sweetness.
