Robusta grown by Mario Valiente and José "Fofo" Adolfo on Finca Colomba in Chalchuapa, Santa Ana Department, El Salvador at 1500 meters altitude. Honey processed. Light roast (roast color 144.2) with tasting notes of white rice, sorghum syrup, orange acidity, and cocoa powder. This experimental roast batch was developed lighter than intended and offers an unconventional flavor profile distinct from standard preparations.
