El Salvador Finca San Antonio Pacamara

Cogito Coffee Roasters

About This Coffee

This is a Pacamara microlot from El Salvador, grown and processed by Johny Lemus on his 10 hectare farm Finca San Antonio in the cool hills of Chalatenango in northern El Salvador. The harvest period runs from December to March. This is a naturally processed coffee where cherries are picked ripe, sorted for quality, and spread out to dry whole for at least a month before hulling. The farm primarily grows Pacas variety. The coffee has tasting notes of fermented fruit, foxy, and kombucha.

Cogito Coffee Roasters

Founded in 2014 by Matija Belković and Hannah Powlison Belković, Cogito emerged from their pioneering cafe "Cafe u Dvoristu" when Zagreb had only two establishments serving quality coffee. The addition of Matija Hrkac—three-time Croatian Barista Champion and 2012 World Barista Championship finalist—transformed this courtyard venture into Croatia's leading specialty roastery. Their approach respects Croatia's deeply social coffee culture, where leisurely consumption remains paramount, while introducing international quality standards to a market long dominated by commercial roasting.
