This coffee is a single-origin El Salvador bean with Bourbon variety. It originates from Apaneca-Ilamatepec at about 1,600 meters above sea level. Processing is washed with anaerobic variation. Roast label indicates a Filter style, and the product is sold in 250 g increments as Whole bean or other grind formats. Noted acidity and fruity sweetness accompany a crisp, clean cup.
Unity Coffee Roasters started with a cafe in 2016 and got into roasting in 2019. They're now based in Cascais with a second cafe in Oeiras, but the Giesen roaster sits in the back of the Cascais shop. The founder is Alexander Rozhkov, a Russian entrepreneur who relocated to Portugal after Russia's invasion of Ukraine; the name "Unity" reflects that directly, meant as a meeting point for people from all over. Roastmaster Oleg runs the roasting side, dialing in individual profiles for each lot and doing two roast sessions a week to keep the stock fresh. The lineup is 100% Arabica, sourced across several growing regions with Brazil and Ethiopia among them.
