This community lot comes from farmers around El Sauce, a town in the Quilanga region of Loja in southern Ecuador. The coffee is grown at elevations between 1700-2100 meters above sea level. It features Typica and Bourbon varieties, with much of the Typica (locally called Criollo) thriving at higher elevations after lower-elevation trees were affected by leaf rust disease. The coffee undergoes washed processing with 24-hour de-pulped dry fermentation and is dried on raised beds. The high-grown Typica and Bourbon varieties yield a complex, deep, and structured cup with flavor notes of maple syrup, custard, dried fig, and deep characteristics.
