This coffee is from El Tambo, a municipality in Cauca, central-western Colombia, produced by the women's cooperative ASMUCAFE (Asociación de Mujeres Agropecuarias de Uribe). The coffee grows at altitudes between 1400-2000 meters and consists of Castillo and Colombia varieties. It undergoes a washed process with double fermentation: cherries are left in loading hoppers for 14 hours, then de-pulped and placed in traditional open fermentation tanks for another 10 hours before being washed and dried for 8-12 days. The coffee offers flavor notes of molasses, orange zest, and cacao with zesty citric acidity and mellow candy-like sweetness, finished with dark chocolatey notes. Roasted for espresso but suitable for all brew methods.
