Colombia, Tolima. Varietal: San Bernardo. Process: Natural. Altitude: 1,700 – 2,000 masl. Produced by Javier Rubio at El Libano farm in Gaitania, Tolima. The lot features the San Bernardo variety, a natural mutation of the Typica lineage. Hand-sorting of ripest cherries followed by 45-hour aerobic fermentation and 13 days of drying in parabolic dryers. Cupping score reported as 88.
