This seasonally changing espresso blend combines coffees from three origins. The base comes from Poços de Caldas, Brazil, a naturally processed coffee grown on rolling hills and lower-altitude mountains. The blend includes coffee from San Ignacio in the Cajamarca region of Peru, naturally processed with dried fruit notes. Guatemalan Monte Rosa from the San Marcos region is grown on the Nueva Granada estate near the Tajumulco and Tacaná volcanoes. The high-altitude Guatemalan component produces a harder, denser bean with rich and smooth flavor.

Flying Horse Coffee was incorporated in August 2017, with the roastery opening in 2018 by Jack Bradshaw and Phillip Way. Jack had worked as a roaster in Melbourne; Phillip was setting up Mare Street Market in Hackney when the two connected through a coffee jobs board. The roastery operates from inside the market and now supplies four London cafés, including locations in Hackney, White City, Portobello, and Shoreditch. They source seasonally through importing partners with long standing farmer relationships. Packaging is made from sugarcane bioplastic that is fully recyclable and carbon negative in production.
