This single-origin coffee is grown at approximately 1700 meters altitude on volcanic slopes near Lake Atitlán in Sololá, Guatemala. It comes from smallholder members of Cooperativa El Paraíso Tz'utujil. The cherries undergo controlled maceration and fermentation processing to highlight sweetness and red fruit character. The coffee features juicy fruit notes with a clean, vibrant cup and smooth finish. The lake's rich volcanic soils and cool climate contribute to the coffee's vibrant character.
Flying Horse Coffee was incorporated in August 2017, with the roastery opening in 2018 by Jack Bradshaw and Phillip Way. Jack had worked as a roaster in Melbourne; Phillip was setting up Mare Street Market in Hackney when the two connected through a coffee jobs board. The roastery operates from inside the market and now supplies four London cafés, including locations in Hackney, White City, Portobello, and Shoreditch. They source seasonally through importing partners with long standing farmer relationships. Packaging is made from sugarcane bioplastic that is fully recyclable and carbon negative in production.
