About This Coffee

This coffee is from the Bensa Setamo washing station in Bensa District, Sidamo, Ethiopia, growing at 2100-2300 meters altitude. The washing station processes cherries from over 550 smallholder farmers operating family farms. Harvest takes place from October to December via hand-picking, followed by sorting in water, depulping, and fermentation in tanks for 24-48 hours depending on temperature. The parchment coffee is then thoroughly washed and dried on raised beds until it reaches 10-12% moisture content. The coffee features floral notes of hibiscus and intensely fruity flavors. It is roasted light and specifically designed for filter brewing methods.

Simons Kaffee

Simons Kaffee is a micro roastery in Frutigen, in the Bernese Oberland, run by Simon Inniger alongside his full time work in IT consulting. Simon's coffee journey began with a Bialetti stovetop pot and grew through formal training at the Kaffeemacher Coffee Academy in Basel, where he completed sensory, advanced barista, and roasting courses. He roasts on a secondhand Probatone 5kg machine inside a converted garden shed of about 10 square meters, built with help from his family. What sets Simons Kaffee apart is its focus on making specialty grade coffee that works well in fully automatic machines, reflecting the preferences of his regional market. He buys directly from producers and roasts precisely for each brewing method, including portafilter, filter, and since 2022, compostable Nespresso compatible capsules. It is a genuinely small operation with a clear philosophy: simply really good coffee, made accessible.
