This coffee is from the Halo Beriti Washing Station in Ethiopia, established in 2014, serving 750 smallholder producers. This is a special preparation natural process coffee where hand-sorting was done repeatedly throughout receiving and drying to ensure only perfect coffees were selected. The cherries are collected from a limited number of smallholder farmers, with 90% perfectly picked red cherries, 5% semi-red, and 5% overripe. The coffee is processed and stored separately from other lots. Cherries are sorted for ripeness and quality, rinsed clean, then spread on raised drying beds where they are rotated constantly throughout 8-25 days of drying depending on weather. Coffee in this region is grown on small plots without fertilizers or pesticides. Recommended brewing: Espresso at 1:2.4-2.6, 91°C, 30s; Filter at 1:15.5-16.5, 90°C, with 3+ weeks resting time.
