This coffee is a single origin from Worka village in the Yirgacheffe region of Ethiopia. It is produced by Mr. Bekele Gemeda on his 9.5-hectare farm, who is a member of the Single Farmer Project. The coffee is composed of heirloom Ethiopian varieties native to the area, processed using the washed method with same-day depulping, short open-air fermentation, and thorough rinsing in water channels. The beans are sun-dried for 5-15 days. The coffee has bright, tea-like qualities with lemon, green tea, and jasmine flower tasting notes.
Founded in 2014 by Matija Belković and Hannah Powlison Belković, Cogito emerged from their pioneering cafe "Cafe u Dvoristu" when Zagreb had only two establishments serving quality coffee. The addition of Matija Hrkac—three-time Croatian Barista Champion and 2012 World Barista Championship finalist—transformed this courtyard venture into Croatia's leading specialty roastery. Their approach respects Croatia's deeply social coffee culture, where leisurely consumption remains paramount, while introducing international quality standards to a market long dominated by commercial roasting.
