About This Coffee

This Ethiopia Yabitu Koba coffee is a single-origin washed coffee from the Guji Uraga region, one of Ethiopia's highest-elevation coffee producing areas. The coffee is sourced from small-scale farmers in the Yabitu Koba community and processed at the Gogugu washing station, managed by SNAP. The beans undergo 24-48 hours of fermentation followed by soaking and drying on raised beds. This light roast expresses delicate florals, juicy acidity, and sweetness with tasting notes of peach, honey, Meyer lemon, and magnolia blossom.

Ruby Coffee Roasters

Jared and Deanna Linzmeier started Ruby Coffee Roasters in late 2013, roasting their first batches from a garage in rural Portage County, Wisconsin. Jared, a former Intelligentsia apprentice who had worked in Los Angeles, Portland, and Seattle, returned home to build something rooted in the same care for sourcing and craft he had learned in those cities. Ruby is named after Jared's grandmother. The roastery is certified organic and focuses on direct trade with small scale producers and cooperatives, prioritizing long term partnerships that support economic and environmental sustainability at origin. Food & Wine named Ruby Wisconsin's best roaster in both 2018 and 2019, and the company has also earned Good Food Awards and a Wisconsin Innovation Award. From that garage to a purpose built facility in Nelsonville, the ethos has stayed the same: thoughtful sourcing, careful roasting, and a quiet confidence in letting the coffee do the talking.
